Yummy treats for Mummy...

Blueberry Lime Loaf

Ingredients:

Loaf
160g plain flour
1 teaspoon baking powder
¼ teaspoon salt
100g butter
100g cream cheese
4 tablespoons maple syrup
2 eggs
1 teaspoon vanilla bean paste
1 tablespoon lime zest
120g blueberries

Topping
100g cream cheese
2 ½ tablespoons maple syrup
½ teaspoon vanilla bean paste

Method:

Preheat the oven to 180°C and line a bread loaf tin with greaseproof paper.

In a bowl add the cream cheese, butter, maple syrup. Beat together until light and fluffy. You can either use an electric mixer or do it by hand. Add the eggs one at a time, making sure to mix each one thoroughly. Add and stir the lime zest and vanilla bean paste.

Pour in the flour, baking powder, salt and gently fold into the mixture. Once it has mixed add the blueberries and gently stir in.

Pour the mixture into the bread tin. Cook for 30 minutes or until the centre is cooked. Take out of the oven and leave to cool.

For the topping, mix the cream cheese, maple syrup and vanilla bean paste in a bowl until smooth. Once the loaf has cooled spread over the topping with a spatula.

It’s now ready. Make it extra special and serve on our beech serving board. Enjoy!
